Pico de Gallo


A jalapeño pepper or two (Or other hot pepper if jalapeñoes aren't available in your area
A peeled onion or two
A ripe tomato or two
Some cilantro (Or parsley) A little vinegar
Salt to taste

Remove the seeds and stem from the pepper.
Finely chop all vegetables.
Mix everything together.

Pico de Gallo is traditionally served with fajitas, barbecue, and such but is good with most anything. I often eat it instead od picante. It's good on baked potato, scrambled eggs, beans.

I've often heard it said that jalapeñoes aren't all that good, but they make everything else tast so good.
