Tomato Gravy


1 ripe tomato, sliced
1 pinch baking soda
2 tbsp bacon drippings (or oil)
2 tbsp flour
2/3 cup milk
1/3 cup water
Salt and pepper to taste

Sauté tomato slices in drippings. Break up tomato with spatula.
Remove the tomato skins with a fork.
Add 1 pinch of baking soda to prevent milk from curdling.

Stir in flour.
Cook over low heat, stirring constantly until mixture starts to bubble.
Remove from heat..
Stir in liquids.
Simmer for 1 minute, stirring constantly.
Sprinkle with salt an pepper and serve.

This is best eaten by breaking two biscuits open on your plate and ladling some gravy over each half.
