Bubble and Squeek


Bubble and squeek is mashed potato, done with butter and milk, mixed with greens (either sprouts, dark cabbage or spinach) and salt and pepper and fry until it browns, turn over and cook again until it browns. This is fantastic, you eat it with the egg and beans and it is memorable - try it if you haven't. Happy New Year .

I wonder if you folk over the pond know about this little gem. On boxing day (the day after Christmas) The meals usually consist of plates of cold meat - left overs from the main Christmas feast. We have sliced turkey, chicken, beef, pork, tongue, ham - all kinds and they are generally served with a range of pickles. Onions and cucumbers, mustard pickle, red cabbage (making my mouth water just thinking about it)

Anyway for breakfast we have a full English. Again this is a variation but usually has some sliced ham or bacon, mushroom, sausage, tomatoes, beans, an egg or two and bubble and squeek.
