Curry Beef
I am giving a beef recipe because it's the closest one I have to
venison.
You will need these ingredients:
2 lb beef
5 cups water
4 teaspoons corriander powder
1 teaspoon turmeric
1 teaspoon cumin seed powder
2 teaspoon chili powder
1 teaspoon ground black pepper
3 teaspoons salt
2 teaspoons fresh ground ginger root
2 large onions
3 cloves garlic
4 tablespoons ghee.( this is indian
cooking butter-you may use vegetable oil or butter instead if you
prefer)
Then
!; Clean all the beef of any fat, cut into one and a half inch
chunks and gently
simmer in the lightly salted water until tender. (don't fast boil it or
it'll be tough as your boots)
2: Mix together the coriander powder, turmeric, cumin seed
powder, black pepper,
chili powder, salt and ginger to make a paste, using a little milk.
3: Peel the onions and slice thinly along with the garlic. Fry slowly
in the ghee until golden brown.
Add the paste you've made and gently fry for a further 4 minutes.
4: Now add the meat together with half the water in which it has
been simmering. Bring to the boil and simmer for 25 minutes,
adding some of the remaining water if the gravy appears too thick.
5: Serve garnished with a little chopped green corriader or parsley,
Palao rice, Chapattys,
It is also good to have some mango pickle and maybe a
dish or two of vegetables ( ladies fingers, mushroom, potatoes,
spinach etc) prepared of course the way the Indians do
them.(recipes available if you want)

Quite a few threads ago I said I would post a curry recipe for Carol.
This was in an attempt to hide the gamey flavour of venison, would
probably be ok with bear as well for those of you who eat bear
meat, rabbit etc...that is if you don't enjoy the flavour of game but
have some landed on you for some reason.
Just try this I think you'll like it. ( you may halve the ingredients if its
only for two people) I usually do one of many chicken recipes
which are very popular. JD said you had some good Asian food
shops, in Texas anyway, to get all the stuff so good luck
