Chorizo
1/2 lb ..... ground pork (or beef is OK)
1/4 lb ..... ground beef
1/2 tsp..... ground thyme
1/2 tsp..... pepper
3/4 tsp..... salt
1 .......... small bulb garlic
1 1/2 ...... tsp oregano
1/4 cup .... chili powder
3/4 tsp .... ground cumino
1/4 cup .... vinegar
Mix all ingredients well. Let sit overnight in refrigerator.
Keeps well, although I divide and freeze recipe-sized portions.

Another Burrito
(Use personal taste for proportions.)
chorizo, eggs, refried beans, shredded cheddar cheese, chopped
onion
Lightly brown chorizo. Remove fat. Add egg and scramble. Add
beans and continue heat 'til all is hot. Put a glop on a warm
flour tortilla, add cheese and onion, roll tortilla around it
all. (bottom 1/3 up, then sides to middle)
