Flan


1 can sweetened condensed milk
1 can evaporated milk
6 egg yolks with membrane removed
pinch of salt
1 tsp vanilla
1 cup sugar

Melt sugar in saucepan, medium heat, until golden brown. Pour in mold and allow to cool

Mix the rest of the ingredients and pour into caramel covered mold. Cover with aluminum foil.

Place mold in a larger pan containing 1/2 inch of water..

Bake at 350 degrees F. for 1 hour or until a knife inserted comes out dry.

Cool well and unmold.

When I left Cuba in 1963, The Cuban government would not allow us to bring anything of great value. So instead of clothes, we brought things that could not be replaced, such as family photographs, etc. This recipe is one of those things.

Flan is a traditional dessert served in hispanic cultures.
