Stuffed French Toast


This one came from a local Bed & Breakfast - works ok for serving 1 or 2 persons, also.

1 loaf Fremch bread or challah
1 pkg cream cheese
1 tsp milk or cream
1 cup fresh strawberries or raspberries
1/2 cup toasted nuts
2 tbsp Chambord (raspberry flavored liquer)
powdered sugar enough to coat

In medium bowl, combine cream cheese liquer, and milk until smooth.
Chop nuts and berries and stir in.
Slice bread on diagonal, about 1 1/2 inches thick.
With a sharp paring knife, cut a pocket in the top of each slice.
Fill each with about 11/2 tablespoons of filling.
Dip each slice in powdered sugar.
Place in plastic freezer bags and freeze.

Batter: (can make smaller amount for l person / slice)
4 eggs
2 cups milk
3/4 tsp vanilla
3/4 tsp nutmeg
1 tsp cinnamon

Toppings:
8 strawberries, sliced

1/4 cup chopped nuts
powdered sugar
sprigs of fresh mint in season

Remove stuffed bread from freezer about 1 hour before serving.
Prepare batter by beating ingredients together.
Dip partially thawed bread into the egg mixture and allow it to become moderately soaked on both sides.
Drain the excess before grilling.
Generously coat griddle with butter and cook each side until brown.

Overlap two or three slices on plate, sift powdered sugar generously over them, sprinkle with nuts, garnish with strawberries and more powdered sugar..

Makes 8 servings.
